I’m beyond excited to introduce myself as the voice behind Valivo’s One Sweet Bite, a blog dedicated to exploring the world of desserts – one bite at a time.
You might wonder what inspired this unique approach to dessert blogging. Well, my friends, it’s a personal journey that’s taken me down a winding path of self-discovery, culinary exploration, and a dash of bittersweet irony.
A few years ago, I decided to pursue my passion for baking and decorating by enrolling in culinary school. I’d always been fascinated by the art of cake decorating, and my friends and family would often rave about my creations. However, I soon realized that while I had the creativity and skills to decorate, I lacked a deep understanding of the science behind baking. So I enrolled in Auguste Escoffier School of Culinary Art where I graduated as a Pastry Chef and continue my journey to better understanding food.
But life had other plans. Right before starting culinary school, I underwent bariatric surgery. It was a decision I made to improve my health and well-being, but it also meant that I had to drastically change my relationship with food.
One of the biggest surprises was realizing that I could no longer indulge in entire desserts. A whole slice of cake, a rich chocolate bonbon, or a creamy scoop of ice cream were all off-limits. My new reality meant that I could only have one bite of dessert at a time.
At first, it was tough to accept. I felt like I was losing a part of myself, like I was saying goodbye to the carefree days of indulging in sweet treats. But as I navigated this new chapter, I discovered a silver lining. I could still experience the joy of desserts, just in small amounts.
And so, Valivo’s One Sweet Bite was born. I now spend my days exploring the world of desserts, one spoonful at a time. I visit bakeries, cafes, and restaurants, sampling a wide range of sweet treats and sharing my honest reactions with you. Also, I’ll share tips and tricks I have learned and even post some of our house recipes from Valivo’s Family Bakery.
On this blog, you can expect to find reviews of desserts from all over, from classic favorites to innovative creations. I’ll share my thoughts on texture, flavor, and presentation, all based on that single, precious bite.
